I am making a lemon meringue pie on Sunday and have this morning made the pastry (pate brisee) which is clingfilmed and in the fridge and also the lemon curd. That way on Sunday morning it will be an easy job to assemble everything and only the meringue to make from scratch. I have found from experience that two days is about right to prepare to this stage - the fresh lemony tang deteriorates after that.

Does anyone else have tried and tested ideas of this type?
