When I was in Normandy I bought some fresh (sort white) cheese from the market and what I assume was a dried version - smaller, flat, round and brown. The seller told me I should grate it. It had quite a stgrong flavour. Was just wondering if anyone knows was this likely to be just a dried version of the fresh, and if so how do they dry it?

I wish I had taken a photo.
