Never made one with a Genoese type sponge, might try it one day

I always trim the sides when I unroll to add the jam, they will surely dry out again if you do it while warm?

I have always thought that making a Swiss roll falls into the 'Life is too short to stuff a mushroom' kind of category. I find them a nightmare to roll them properly without cracking and would rather just make a jam sponge.

That said, those look good and I think that Genoese sponge might work best.

I am, occasionally, a severe critic of Felicity because (IMHO) she tends to be unnecessarily fussy. I also believe her sources are, at times, not the best. However, it`s HER column and she can do what she likes.
In this case, I may just give it a try - I haven`t eaten a good Swiis Roll in years and I`m thinking of putting together one with guava jam. :hungry:

i haven't made a swiss roll since i was at school.
the one in the article that i thought looked best was the fortnum's one - it looked very similar to a brilliant, massive, fresh cream one that i used to treat myself to from a bakers in truro a good while back.
when the first photo in the article came up i thought that she was showing the worst first, then i went back and read the photo titles.
i usually refuse the mass produced ones and the small chocolate ones covered in chocolate - all they taste of is sweetness, have yeuky fake cream and have no merit in the cake world. i think you can tell it isn't my favourite type of cake. i will accept arctic roll - only a sleigh ride away from swiss roll.
i could go to my grave without regret if i never make another.

I've made roulades (using a Swiss roll tin) but never an actual Swiss roll. Quite fancy trying Felicity's recipe actually. :chops:
