I like eating ramen at Wagamama ......... sadly OH can't stand the kitchen noise and clatter so I tend to go there on my own or with DD .............. I've not made it myself ....... I might give it a try sometime .................

I notice one of her main sources is MiMi Aye's Noodle book, which I might get
Never made the full on version she describes, and not sure I've eaten it either, not much like the various forms of Ramen in various broths you get in noodle and dumpling joints or make using a tarted up packet kit

Add it to the ever growing list...

I would never have used so much miso!

MiMi's book is excellent. I republished a review of it on my site that I'd originally written for Good Things magazine a couple of years back.
