Brioche and Caramelised Banana B&B pudding?

One of the perks of OH's job is that he sometimes comes home with freebies, albeit that they've sometimes reached their sell-by date.

Yesterday he came home with a Vanilla brioche Tear'N'Share ring, some ripe bananas and a pot of double cream.

The idea of a brioche bread & butter pudding with caramelised bananas at the bottom came to me ... how would you go about it?

I can do the custardy soaked brioche bit ... it's how to caramelize the bananas my brain's gone blank about :rolleyes: :oops:

I think I might serve them seperately. Make the B7B pudding and in a frying pan cook the quartered bananas with and butter brown sugar , and it it was our house flambe in some rum to serve with the pudd, :drool: :drool: :drool:

That's how I would caramelise the bananas, whether or not I was going to add them to the pud or serve separately!

That was a huge success ... but OH says he's now waiting for a coronary ... Doesn't seem to stop the leftovers disappearing tho ... ;)

Last Bank Holiday I used up some croissants and brioche by making the James Martin croissant B&B pudding. This was also a coronary in a baking tin, but would most definitely have been improved with a side of rum-infused bananas! :hungry:

We have puddings once in a blue moon ... perhaps four a year ... but OH is convinced that they'll be the death of him ... however on holiday if he goes a day without ice cream he gets withdrawal symptoms :lol:

SIL makes a raspberry and white chocolate B&B pudding. I quite fancy a boozy version (of the pudding :D )

On ice cream..... whilst on Corsica, I tried chestnut ice cream, very very lush and a nice texture too...
