Lemon meringue pie

Has been requested for a family do on the 22nd. Haven’t made one for years.

I really hope he doesn't mind me posting this, but the best I've ever tasted was given to us by Hickeybank, on the old board. Never been bettered in my view:-



LEMON MERINGUE PIE,
Using liquidiser & blender
1 baked 7” flan case.
Filling
1 Lemon (quartered),100g Sugar,2 Eggs (separated)
25g Cornflour,250ml Water,25g Butter

Topping
Egg Whites,75g Caster sugar.

Method
Place Lemon, Sugar, Egg Yolks, Cornflour and water in liquidiser, blitz on full power for 10 seconds.

Press through sieve into a pan, pressing well with a spoon to extract all juice.

Add Butter and cook over a medium heat till it thickens, stirring all the time, continue cooking for 2-3 mins.

Remove from heat and allow to cool.

When cool fill flan case.

Place Egg Whites in bowl and whisk on max until thick,
Sprinkle in ½ the suigar and continue whisking till quite thick.

Switch off, remove bowl and fold in remaining Sugar.

Pile Meringue on top of lemon mixture making sure to cover edges, dust with caster sugar.

Place in pre-heated oven @200C/400F gas mark6 for 5-10 mins till peaks are golden brown.
