...wth thyme I am sure.

I used to make this some years ago but struggling to remember precisely how and cannot find the recipe anywhere. I want to have a go and wonder if anyone can help?

I remember buying the Camembert along with rustic, large bread rolls to accommodate, taking off the top of the roll, hollowing out slightly, sticking the cheese in snuggly then my mind has gone blank. I am sure thyme sprigs were involved and the whole thing baked until melty, but am I missing any other components?

Ah, some sort of caramelised onion affair has just come to mind, maybe under the cheese.....?

I may have answered my own question, but a definitive recipe would be good. :tu:

As you say, you've answered your own question.

There are lots of recipes for whole camembert in larger loaves to give you flavouring ideas, but just go ahead and try - you can't go far wrong.

I do something similar but using dough rather than rolls

Bread dough made with 300g flour, rolled or pulled out like a pizza. Put the cheese in the middle. Top the cheese with softened red onion, which can have been seasoned however you fancy - S&P, herbs, vinegar/sugar, whatever you like.

Draw up dough over the cheese & onion like a big cottage loaf, pinch the edges together to seal it then turn over onto a greased sheet and bake. By the time the dough has cooked the cheese will have melted.

One thing, don't use a very ripe Camembert. It is supposed to ooze when cut open, not drain all over the floor! Been there...

I can see that rolls would be easier, and more convenient for smaller quantities, but if you want something to share, the above is well worth a go.

I think I would rather bake the Camembert in a box and use the bread to dip in it.

It might be nice with rosemary too, tezza. Roast garlic?

I am always in two minds about baked Camembert. It's very rich and it rather sticks to your teeth...!

I bake it in the box, having removed the wrapping of course. A splash of calvados goes well if you make a couple of small slits in the top, Dry white wine or cider would work too - not too much though. use the bread to dip!

I love the way Nigel Slater does it - I usually copy him - haven't tried it with calvados .... yet ... that sounds wonderful .... :chops:

With your recipe Tezza I might make a few slits and insert some slices of garlic. Definitely thyme or even rosemary and a little drizzle of good olive oil. And keep the bread you pull out of the roll as that surely has to be the chefs treat dipped in the gooey cheese

My tastebuds are now highly tickled !!!! I have also found a small circular brie in the DF so might do a dippy cheese later in the week.

What a lovely selection of ideas here, thank you! I would be very interested, if I get invited out for Christmas lunch, to suggest the cheese baked in dough, also liking the look of the ham wrapped brioche.
I don't think my original recipe, wherever I found it, had garlic slivers inserted but that would work I am sure.

The nicest thing to wrap in filo is single, not too soft, goats' cheeses with a few fresh, frozen or bottled morello cherries on top, then make into purses. You can do these ahed and freeze then cook when required straight from the freezer. Good standby over Christmas :chops: :chops:

I love the cherries with cheese idea! I've never tried goat's cheese before. Better see if I can try a bit from the deli. :grin:
