Pimentón de la Vera

I watched some of the Hairy Bikers' series about their Mediterranean trip.

They seemed to use a lot of "sweet paprika" which they identified as being called "Pimentón de la Vera". They ladled large spoonfuls into several tomato based dishes.

As OH is not overfond of very hot spice, I found a tin of it in the World Food aisle of Sainsburys last week. I went to use it tonight and saw a small "badge" on the tin that said "Hot" with three chillies alongside. It was very hot, so I didn't use it.

So what's going on? Are the Hairy Bikers wrong? Is this Pimentón de la Vera not a sweet paprika? Is it mislabelled?

Confused!! :(

I have a feeling it comes in different strengths. The mild being the one you hoped for.

I've always understood that "sweet" paprika simply meant that it was not the smoked stuff. Is this correct?

Sweet should be mild. It's often referred to as 'doux' which in French means both sweet, but also soft, gentle etc. But yes it can be smoked. I have a tin of both sweet and the hot versions of smoked.

de la Vera refers to it's being smoked rather than it's spicyness, I think.

That tin looks like the one I have, but the little yellow rectangle at the bottom, where it says “Dulce sweet” on yours, says “hot” followed by three chillies.

Unless my mind is going, the Hairy Bikers are giving out the wrong information. :(

Which recipe was it?

They use the sweet version in their meatballs and patatas bravas recipe. I took a screen shot:

They do say 'sweet paprika' too, but perhaps didn't explain the de la vera thing.

I am sure you will find a use for the hot one. I always have both types in my cupboard. Just use it sparingly.

Yes, it comes in different strengtgs, you need to countbthose chillies

Yes, I would have thought of "sweet paprika" as the unsmoked version (Hungarian for example) until quite recently but it seems people do say "sweet paprika" to mean the mildest version of pimenton de la vera, and if the HBs said pimenton de la vera, they mean smoked

I have the La Chinata hot, and a different brand of mild labelled Pimenton Dulce de la Vera in big letters, dulce being sweet, so that's what you wanted

Here's a link to La Chinata's full range, you will notice they make something called smoked sweet paprika, but the one you will find in Watford is the one that looks very similar to the hot one

The screenshot is of the variety they used. It's a screen shot from the episode taken from iPlayer.

As you can see it's al la vera and sweet.

I have had this brand too.

I have sweet, hot and smoked varieties, sometimes I use all 3 in the same recipe, they all vary and bring their own element to a dish.

Think de la Vera just refers to the area in Spain the peppers are grown in.

I just checked my tin of La Chinata and it says 'sweet' in the little yellow box, however, I also have a tub of Tesco's own that says 'Spanish Smoked Paprika' and on the back in small letters, it says 'smoked hot paprika' ..... That's told me something I didn't already know ;) :tu:

"De La Vera" refers to a place in South western Spain, where the climate is warm enough to grow chiles. There are different varieties of chile used for the "pimenton", so we have mild or hot versions. The "hot" versions are, in my opinion, not very hot at all; moderately spicy might be a better description.
The smoked version is made by smoking the chiles over varieties of oak logs. The final product is considered so important to Spanish cuisine that it has a D.O.C . rating - both the pepper from La Vera and the other version from Murcia.
The description of the product as "Paprika" is, to be strict, wrong. Paprika is the name given to the Hungarian pepper and is made from a very different chile.

Confusingly both sorts are in adjacent piles, side by side on the shelf, with the odd one mixed up where someone has had a look and put it back a bit further along...

I've had a red tin of the mild stuff at home for a wile, but bought a little pot of Tesco own brand from their cook's ingredients section when we were away somewhere. Didn't realise it was hot until too late. Now I use it in combination with the sweet one or with paprika, otherwise it causes offence. If I want something spicier I serve hot accompaniments.

The paprikas. Tins left to right Hungarian Sweet (Edes, sladka) paprika, Hungarian hot, Spanish Pimenton Dulce de la Vera, Hot pinenton. The packet is the reserve supply of Hungarian sweet paprika that lives in the freezer. I use them all in all sorts of things
