One ingredient banana ice cream - have you ever made this?

Postby TeresaFoodie » May 14th, 2018, 3:10 pm

I am just after some reassurance that something so simple will actually work!

https://blog.thatcleanlife.com/one-ingr ... ice-cream/

This link shows the basic recipe with some variations, all of which look lush!

I had six bananas starting to get brown spots, so thought why not! I currently have one large and two small bananas sliced up onto a plate, covered in cling film and in the freezer. My food processor, spatula and container are on the worktop ready for the blitzing. I may add peanut butter to half of the mix, because I can!

I will report back on results, whether it's a :tu: or a :td:

It is made. It is lush! :bounce:

After two hours in the freezer I took the banana slices out and they were stuck hard to the plate so I had to chip the bananas off with a small knife. Next time I think a light smear of oil on the plate would help. Into the food processor they went for a blitz but I let them sit there for a few minutes first in case their hardness broke my blade. On their own they would have made a gorgeously creamy ice cream but I added 2tbsp crunchy peanut butter and 2tbsp natural Greek yoghurt which I had lurking at the bottom of a pot. I would say two large bananas used as I have would serve two. I have popped it back in the freezer. It might make an appearance later on! :hungry:

Try it folks. A big success! :tu:

I've just made some more, this time I've left out the peanut butter and added a small carton of blueberry Greek yoghurt. Absolutely gorgeous. :hungry: It won't last long!

Yep, I love it. Have also added other fruit like mango or strawberries. And if it's not a sweet enough banana, a bit of honey or a couple of dried dates... People add nutella sometimes, that's good. Or peanut butter.

I have promised myself a dabble with coconut flavourings next time. Possibly coconut milk or creamed coconut in the mix, decorating the ice cream with toasted coconut before serving.

I have a stray half over-ripe banana that I'm about to pop in the freezer ...

Edited to say that it was a very large banana :D

It was delish! Whizzed it up with the end of a pot of 0% plain Greek yogurt :chops: We each had a little ramekin of it as it was only half a banana

Edited to say that I took tezza's advice and slightly oiled the plate I froze the banana on and the slices came off easily.

I had some of my ice cream tonight on a piece of Jamaican ginger cake. Wow! :chops:

That sounds nice. It's a shame rum is expensive, a dash in the ice cream would take the Jamaican theme to a new level!

After the boat trip yesterday I had a clotted cream and ginger cake ice cream, should have been more gingery for me.......

Check out the bubblegum flavoured ice lollies/creams only a quid for a box of 6, actually taste a bit of banana - I like them (from Iceland) only 66 calories each... :tu:

I'm in Iceland a lot these days Zosh, checking out their goodies, weekly deals and absorbing some of their cool air! I'll take a look for a change as usually I am on the hoof and don't buy things that could melt. Clotted cream and ginger cake ice cream sounds illegal! :hungry:

I've got 5 very ripe bananas and a tub of creme fraiche to use up and I suddenly remembered this thread! It's ideal because I can lose it in the freezer for a while. I'll be making it tomorrow.

Tried some tonight. It's rather nice, very creamy texture (and there wasn't a huge amount of creme fraiche). I certainly couldn't manage much at a time! I can see exactly why you enjoyed it with ginger cake.

Glad you like it! I also find that I can only manage a small amount at a time. It's very adaptable to whatever flavours you have lurking too.
