Whenever I have lots of citrus fruits and eggs (I always have sugar in) I get a fancy for making a fruit mousse. I do not want to use gelatin. I want the eggs to do the setting work.

Does anyone have a t&t recipe please, as quantities in recipes that I have found vary so much.

I don't have a specific T&T recipe for you to try but was going to also suggest a syllabub which avoids the gelatine, and is rather lovely to boot

Tezza, you could always use agar agar which is a veggie substitute. What about a souffle?
