Vietnamese Style Chicken Salad

VIETNAMESE STYLE CHICKEN SALAD
This is one of Moon's Recipes. She grows her own bean sprouts, I omit them. The cucumber is the small Mediterranean type. I put in a small mango, when available.
INNGREDIENTS
1 Chicken Breast (about 200g) 4 tbsp dark soy sauce 1 teasp Five Spice powder 1 cucumber, cut into match sticks, 1 teasp salt 3 tbsp sunflower/peanut oil 2tbsp sesame oil 1 tbsp sesame seeds 30ml Chinese Rice wine/ Dry Sherry 2 Carrots, cut into matchsticks 4 Spring Onions, shredded
SAUCE
4 tbsp Crunchy Peanut Butter 2 tsp lime juice 2 tsp sesame oil 1/2 teaspoon chili powder 1 Spring Onion, finely chopped
Poach the chicken in water together with 1 teaspoon soy sauce and the five spice. Cool, then shred the chicken .
Sprinkle the cucumber match sticks with salt allow to drain.
Heat the sunflower and sesame oils in a wok or frying pan. Add the sesame seeds, fry for 30 seconds. Add the carrots, stir fry, then add the remaining soy sauce and rice wine./sherry. Remove from heat, reserve the pan juices..
Rinse the cucumber, dry. Place cucumber, spring onions, carrots, bean sprouts, shredded chicken and pan juices in a bowl, chill for about an hour.
Make the sauce, cream the peanut butter with the lime juice, sesame oil and chili. I usually use a little hot water to bring it together, then stir in the spring onions.
Arrange on a shallow platter, I usually serve it on noodles, top with the peanut sauce and a few crushed peanut

I have some Vietnamese rice "paper" wraps in the cupboard....

Thank you for posting. It sounds lovely and fresh. I've made rice paper wraps with prawns before and lots of matchsticked veg, with a hoisin I think dipping sauce. Don't know why I only made them the once, as they were low effort yet tasty.
