What would you serve with........?

I wondered if this might be an idea for a thread because I have such a question.

In my case it is what would you serve with a salmon koulibiac for a lunch-time meal?

Good idea for a thread Rats :tu:

With salmon koulibiac for lunch I usually serve just a bowl of lambs' lettuce and a simple vinaigrette ........... but I'm wondering if something like a lightly pickled cucumber salad would go ... something like this

I quite like that idea. , My Danish friend makes a mean sweet pickled cucumber. I haven't seen any lambs lettuce this year yet. It tends to appear
in the autumn/winter. Perhaps baby spinach? Beets in some form are quite Russiany too.

First of all, I had to look up " koulibiac" because it´s the first time I´ve ever seen the word.
Now I know what it is - looks pretty rich ( and very tasty!) to me, so I think I´d go for something really simple.
French beans, poached in a little white wine? Braised baby carrots with a splash of balsamic?
Some fresh leaves as a salad - the dressing would definitely have mustard in it, and perhaps tarragon vinegar.

I love koulibiac. I think any vegetable combination (cooked or uncooked) that goes with fish would work. Mixed leaves with watercress would be nice or tomato, cucumber, fennel etc cut into small dice and mixed together. Or just cooked peas or green beans.

I was also thinking of a watercress-based salad but I also wondered about samphire?

I would just offer a knife and fork with Koulibac ;) 8-) Seriously, something green … beans, samphire, watercress with other salady bits :chops: :hungry: :tu:

Not a cat in hells chance of samphire and I will be lucky to find watercress. Although if I can find some I might be tempted to make a watercress and fresh orange salad. Otherwise probably baby spinach and shredded beetroot.

Can't serve spuds Amber. The filling contains rice also a lot of butter! The fennel might work though.

I'd serve it with salad leaves and an additional salad of tomatoes and green beans in a vinaigrette dressing (with finely chopped onions, if liked).

I think I have more or less settled on a mixed leaf salad including watercress. If so that will be it.

As the guests are all French a tomato salad would seem strange to them - it being more of a starter here. Simplicity seems to be the way forward with the people I am entertaining, well actually most French people who honestly prefer only a few elements on each plate. I think they would rather have a seperate course than a confused plate.

I've got some squid which I want to cook tomorrow. I am thinking of doing them in a batter with garlic and lemon zest and serving them, perhaps with aioli. But what to have with them??

Some good bread to dip in the aioli and a green salad.

We often had this meal when eating out in Spain, the salad would have been served as a separate course before the squid.

We actually had triple cooked chips and a watercress and oenage salad and it was yummy!

Next "problem" Confit of duck - probably with Sarladaise potatoes and ?????????

The two that come to mind immediately are

Green beans with almonds

Braised chicory... available almost all year round here but I've a feeling it may be more seasonal en Provence ?

Endive is usually avaiable and I love it briased - so that might well be a plan.
Grenn beans a bit of a no-go. One of my guests hates them!!

Oooh, go with the endive then ... I think the mellowed bitterness will be great with the richness of the potatoes and the sweetness of the duck ... I may be buying a Eurostar ticket ... :hungry:

There was an item in the local paper yesterday about SW France food. They spoke about confit and Sarladaise potatoes and said they should be accompanied by sauteed ceps. So will search for some in the market tomorrow
