I'd definitely go with a simple salad for the cassoulet. Lambs lettuce would be good.
for chicken kiev I always give the kids rice with it and any combination from mange tout, sugar snaps, green beans, tenderstem broccoli, peas, courgette, baby corn. It is one of the kids favourite quick easy dinners

You know Sea I find cassoulet so filling that I don't feel the need for bread - especially if you do the trad breacrumb topping bi I think salad with or possibly after, . Reminds me , we haven't had a cassoulet so far this winter.

No, I am doing cassoulet this weekend (d.v.), wouldn’t need bread, just get a nice bag of salad from the corner shop to refresh. And a nice Grenache

I'm doing the traditional breadcrumb topping so I may dispense with anything on the side (especially as we have a starter and a pud) but will see how hungry we are! :D

Brussels sprouts! ;)

Or a mix of green cabbage, leeks and cavalo nero or other kale, briefly steamed or boiled then sweated in butter

I think you might find it challenging to source swedes in the Luberon though
Carrots in some form would work, and a celeriac mash or purée would taste good but not be visually exciting :D

We have wild boar for mains on Crimbo day, I will cook it in the George Foreman machine and will do a small tray of roast veg and some red cabbage with flavouring. Or what veg might you suggest. Tray roast will contain, tato, 'snips, celeriac, BNS, sweet tato, onions. I think that is all. Mr. Z chose a wine at Yapp bros to go with the boar today - will advise later, it is out in the garage...

I have a rutabaga (swede) which I bought in Fresh earlier. I am teasuring it to have with a pork roast on Sunday along with hm sage and onion fantail potatoes and sprouts. I love swede with pork.

I ended up doing buttered parsnip and carrot batons and grain mustard mash with the pie.

Zosh is the wild boar locally sourced? Sounds very good anyway. Red cabbage in the Sacandi style guoes very well with it as do chestnuts (buy yhe whole cooked and peeled ones)

Clive there could quite well be both in our cellar - we have problems with the real things which are becoming quite a hazard in these parts and the local hunters seem to be better at shooting each other than the boar.
