Scallop roes

Postby patpoyntz » October 8th, 2018, 5:04 pm

I have some gorgeous, and huge, hand dived scallops. We like the roes and usually cook them with the roe on. However I am making the scallop recipe tomorrow out of Jamie’s 5 ingredients book, which includes black pudding. As DS is eating with us and he is pescatarian, I thought I could do the black pud version for us, and maybe do something different with the roes for him. Any ideas anyone? Thanks.

The roes are lovely breaded or lightly battered and deep fried

Thanks for the suggestions folks.....I love the idea of tempura or breadcrumbed fried roes, but for ease, I just gently fried them in butter, with a little shallot, chilli, garlic and parsley, squeeze of lemon at the end. Son said they were delicious, and appreciated that I’d done them specially for him....we enjoyed our black pudding garnish too!
