Has anyone cooked with this? I knew I had some tofu in the fridge and thought I could put it in a thai-ish green curry, but discovered it's of the fermented variety. Not sure if it will work and don't want to waste it.

I have often cooked with it in the past. When I get back to Loon Fung I must get some more.

If there's a jar in your fridge you must know it's somewhat different from fresh tofu. Salty, sometimes spicy, sometimes winey, depending upon the type. Usually very soft, it would probably disintegrate in your curry. I have added it to parboiled rice in a steamer - that works as the rice isn't stirred so the curd remains intact.

Maybe make the curry with vegetables, say green beans, peppers, baby corn, and have some tofu infused steamed sticky rice with it. Maybe some veg crackers on the side for texture.

That was a while ago... I did just make the curry. Worked fine.
