Cannon of Venison

I saw this at the farm shop today and couldn't resist it.
The piece is 500g, it's rolled and wrapped in streaky bacon.

I have not cooked one of these before.
I'm thinking to sear it then into the oven for 20 mins or so then a 10-min rest.

Does that sound about right?

Accompaniments will be celeriac mash and cauliflower.

Sounds good to me ... although I’d happily rest it 20 mins.

Sounds delicious. I'd think about serving with braised red cabbage, but cauliflower also fab. Love celeriac mash

You can but we haven't had it yet.
Life ran away a bit with us so the venison is having a snooze in the freezer until the weekend.
