Marmalade uses

I was given a large jar of homemade orange marmalade for Christmas. :chops: i have only eaten it on toast or bagel for breakfast, but rarely eat like this these days preferring fruit first thing.

Just looking at the monthly free Co-op food magazine which includes a recipe for beef meatballs with sticky marmalade glaze. Beef is out for me. But...

I've got thinking about marmalade in savoury dishes and different sweet recipes too.

What are your favourites please?

This Nigel Slater Wholemeal Apple and Orange Cake (scroll past the fish pie) is delicious. I was worried that using wholemeal flour would make it heavy, but it doesn't. If you don't want to buy an extra orange just leave the zest out.

I glaze my roast gammon with marmalade.

It also helps to make a marvellous bread & butter pudding.

Marmalade pudding :chops: . DD reminded me recently that I used to make Marmalade Cake a lot (she hates marmalade!). Nigella has a nice recipe for Marmalade Pudding Cake.

Stir some in to ice cream
Make a sauce or glaze for salmon chicken or scallops
Add some to natural yoghurt

I have heard of marmalade used with cheese in a toastier, in place of the usual chutney or pickle

Oh wow, I love all of these suggestions, thank you!

I think the flapjacks really do have to be made very soon! I have most, if not all, of the ingredients in. I also have salmon fillets in the freezer. Yum!

This one to be made soon too. I have been looking for a cake recipe so I can take something into work when (if) I pass my probation period at work next month. This certainly fits the bill. :tu:
