This is my recipe. It´s been tried, tested, sold and enjoyed over 5,000 times, so someone must like it :D :D
1 kg beetroot
325 gms red onion
200 mls tamarind pulp
25 gms fresh ginger
500 gms brown sugar
285 mls red wine vinegar
1 1/2 tsps garam masala
1 tsp salt

Peel and dice the beetroot, chop the onion and grate the ginger. Place in a large pan with all the other ingredients and bring to a boil. Lower the heat to medium and cook until the beetroot is soft and the chutney has thickened. I usually blend it , at this stage; but you could leave it in bits if you want.
It works absolutely wonderfully with goat´s cheese.
