I quite like set cheesecakes for summer desserts. Lemon is a good flavour, because using lemon juice means that gelatine isn't necessary. Having said that, I think the last one I made was Mary Berry's Gooseberry and Elderflower, which was lovely for early summer.

There's a weird one, that works very well, courtesy of Ken Hom. Tapioca, cooked with coconut milk and sweetened, is mixed with a liquidised ripe honeydew melon to make a chilled dessert soup. The recipe is in the 'vegetables and pasta' book. I've also made strawberry soup from the Acton & Sandler book, also nice. I noticed various chilled fruit soups in Hungary but didn't get to try them.

That does sound interesting Badger's mate.

I adore set cheesecakes and mousses. Gooseberry and elderflower sounds delicious. My flavours of choice are usually raspberry or lemon - otherwise something along the lines of butterscotch/maple/caramel with a drop of booze. There are so many to choose from :chops:. I am not mad about cold milk puddings (but still like blancmange!).

Fruity jellies with alcohol in them. Various pannacottas. Cold luxury rice puddings with fruit compotes, particularly gooseberries. Trifles...Nigel’s lemon trifle is lovely, and Nigella’s Anglo-Italian trifle with blackberries. HM ice creams. Boring, but everyone seems to like pavlovas.
I don’t like sweet things, and apart from for testing purposes I don’t eat any of the above....but friends always expect a pud, or maybe two!

Yes, agree about the mint one.
If we have folk in for a very informal meal, or maybe nibbles in the garden, I find a selection of mini-magnums very popular.

Tiramisu, creme carmel or Iles Flottantes has to be up there for me on the favourite chilled puddings list for chilled summer puddings list. :chops:
I'm partial to an old fashioned milk jelly with fresh or tinned fruit and pouring cream too.

Don’t greatly go in for chilled desserts

Crème caramel, chocolate mousse, fruit including fruit salad, ice cream, sorbets, “poached egg flan” - a family favourite of a flan case (sponge or pastry) filled with crème pat and topped with poached (or canned) apricot halves. Summer pudding, lemon meringue or better apple Amber pie.

I can make and eat all of those but seldom do

It does indeed - but I've run out of Pimms for this year :cry:

I like a "Champagne" jelly. Proseco does just fine, with wild or small strawberries or raspberries. If you time it right you can retain the bubbles in the jelly.

Was watching tv today as too hot for anything else and happened to see Rachel Allen on the Food Network Programme. She mad a lovely dessert - Apricot Fool with Cardamom shortbread. It looked yummy!
