Tomato Wine.

To Malt Tomato Wine. Take small, ripe tomatoes, pick off the stems; put them into a basket or tub,
wash clean, then mash well and strain through a linen rag, (a bushel will make 5 gallons, pure ; )
then add two and a half or three pounds of good brown sugar to each gallon ; then put into a cask,
and ferment 'as for raspberry vine. If 2 gallons of water be added to each bushel of tomatoes,
the wine will be as good.

Hmm, I've had country wines made from such ingredients as parsnip , mostly uninteresting, but tomato would be different

i heard it taste best if aged 18-24 months.
the batch i started has only been in for 12 months
since i only have 2 test gallons i will be waiting till spring to try it.
i just set a new batch going two weeks ago.

My F-I-L used to make parsnip wine it was utterly horrible and absolutely lethal. WE never knew if he was trying to poison us or really thought it was a good as he seemed to find it!
I sometimes make green tomato jam which is just about OK.

Rats do you have the recipe for the green tomato jam? I’m sure that we will have some tomatoes which won’t ripen- they went in a little late, so it would be handy to have something to use them up in.

Yes I have , but quite honestly green tomato chutney is much better.!
