Green tomato chutney is good

I was reading Mandalay, a Cookbook by MiMi Aye, and she mentions that the Burmese often prefer to use ripe red tomatoes in cooked dishes where they will soften, but like green tomatoes in salad for the crunch

I found this Luke Nguyen recipe for a Burmese green tomato salad from Inle lake where tomatoes are grown on floating gardens. Looks good, and seems authentic

I love green tomato chutney. Just wish I had some green tomatoes... :chops:

Here's the recipe for green tomato jam, tanslated from French. I have made it a few times but it isn't my favourite preserve.

Ingredients

1.5 kg green tomatoes
1 kg cooking apples
Juice of 2 lemons
25 g root ginger
water
1.5 kg granulated sugar


Wash the tomatoes, cut into quarters.
Peel and core the apples and cut into chunks.
Put tomatoes and apples into a pan. Add the lemon juice. Bruise the gingerand the lemon zest and tie in a muslin bag and place in the pan.
Cover with enough water to come to the level of the fruit.
Bring to the boil and cook until the fruit is tender. Add the sugar, stir until dissolved, then simmer, stirring occasionally, until thick.
Remove the ginger. Pour into sterilized warm jars and cover.

Makes about 2 kg of jam

I tend to indoor ripen any green ones but there's always a few that don't. I like fried green tomatoes or they are lovely roasted with olive oil, garlic, balsamic vinegar and oregano in a low oven until they are very soft. It makes a nice bruschetta topping or side dish.

One of my favourite films of all times is Fried Green Tomatoes at the Whistle Stop cafe. Do you know I have never tried to fry green tomatoes except perhaps a green variety like green zebra

Yes that's a great film - superb cast. :D I'm sure that there are many ways to do them but I coat the sliced toms in well-seasoned flour and fry slowly in either bacon fat or butter until they're soft then turn the heat up to brown them. Lovely as part of a cooked breakfast/brunch. :chops:
