what rules define what is a pudding and what is not pudding?
this is in reference a side bar in another thread.
I want plum the depth what makes something a pudding.

There are two meanings of the word pudding.

One meaning is an alternative name for the dessert course so could include almost any sweet dish eaten with a spoon and fork and following a main course, so includes a wide range of things from fruit compote and custard or cream to a fruit trifle, rhubarb crumble, apple pie, bread & butter pudding, Eve’s pudding ... etc etc etc

The other meaning is used for a sweet or savoury recipe contained in a basin and/or pudding cloth and cooked by steaming eg. steak & kidney pudding, Spotted Dick, treacle sponge pudding.

There are no ‘rules’ as such ... but in the case of ‘pudding’ context usually explains which is being spoken about, but some puddings fall into both categories eg. Spotted Dick, Christmas pudding.

I’ve never really taken to Bread Pudding :?

I love a well-made Bread & Butter pudding :chops: ... but I was only introduced to Bread Pudding in my 40s and it does nothing for me ... at least not the way it’s been served to me so far ...as a cold slab ... I can imagine it would taste infinitely better if served hot with custard ... but no one’s ever offered it to me like that and I don’t feel tempted to make it just to see ...?

I don't think there's a simple definition that everyone can agree on, or that covers every dish possible. To some people, all desserts will be pudding - even if it's ice cream - others only use the phrase to describe something cooked and usually (but not always) served hot.

Suffolk's second definition is good, but doesn't mention baked puddings - sticky toffee pudding or more traditional things such as Eve's Pudding or Queen of Puddings.

I felt that baked puddings were covered by my first definition as they tend to be (with the exception of Yorkshire pudding which can be eaten as a sweet course) a sweet course/dessert course and I included Eve’s pudding amongst them.

Basically never but I feel sure that somewhere there is an elderly Cypriot gent who used to work on the British bases who does a great treacle sponge and other treats. I know of at least one place that who make a very authentic Chicken & Mushroom pie,

Naughty Pepper. In which xase we should have white pudding,

I have a family recipe for steamed rabbit pudding - made in a similar way as steak and kidney with black pudding. bacon and mushrooms alongside the rabbit in the filling

I love rabbit and bacon pudding :hungry:


Think I shall allocate black and white puddings and of course the West Country Hog’s Pudding into the second category ... casings are equivalent to/replace pudding cloths and they’re boiled rather than steamed ;)

When I was a nipper, whatever came after the main meal was called 'afters' ;) It was usually tinned fruit and carnation milk, but could have been a simple hot dish like apple pie and custard, or rice pudding; however NEVER cheese and biscuits - that was never on the menu :rolleyes:
