You can buy natural food colourings extracted from plants quite easily now, even some inexpensive supermarket brands

The trouble is that many of them aren’t stable as pH changes - put anthocyanin (beetroot, red cabbage etc) into cake mix and bake it and the soda turns it grey

I had some strange mauve/grey smear of mayonnaise based sauce on a plate a few days ago. That was presumably acidic and had a faint taste of ? Possibly barberry, going by other things around.

Apart from Christmas stuff I seldom use colourings, so the question doesn’t arise very often and I won’t bother to wade through the Portuguese

i thought it was quite interesting, actually.
i rather like the designs on the pancake type things.

Many years ago, I remember being invited to my husband’s boss’s house for dinner. We were served very grey coq au vin. Fortunately since then, I’ve learnt to add a touch of tomato purée to help keep the red colou.

scully - they made pancakes with patterns on on Junior Masterchef on Friday, it's called pancake art, I'd never seen it before but there's lots on YouTube. Worth a watch if you've never seen it.

I have a feeling that raspberry turns out blue during processing. Interesting about the dyes, like Sue, I would buy them as I rarely use colouring.
