Devizes Pie

This was a topic on Saturday's Kitchen Cabinet. I thought of you Earthmaiden.

Although the recording came from Devizes no-one in the audience had made or tasted it. I think I can see why . . . .

I seem to remember the 'revival' a few years ago. Haven't ever had any but don't dislike any of the ingredients.

As scully says, it is a form of Umble pie - I think that originated using game meat. Thinking about it, there must surely have been a version everywhere, though I wonder if originally it would have utilised meats from different animals like this.

I suppose it would be like jellied veal or brawn in a pie, depending upon the ratio of meat to jelly it might end up rather like a pork pie with egg. There's no suggestion of anything squiggly or dangly.
