It really is a multi-million pound thing isn't it! Thinking about it, crispy usually equates to use of fat either in frying or rendering animal skin/fat. Apart from apples etc (which are crunchy) I can't think of much (anything?) that is crispy and very healthy. Maybe toasted seeds which use the fat already in the seeds could qualify.
I am not overly fond of kettle chips, especially the folded ones. A bit too crispy/overcooked.
