An abundance of jam & lemon curd

Okay, so this weekend I quickly needed to lay my hands on 8 jam jars. No time to buy new ones so I bought four jars of value jam and four jars of value lemon curd.

I have used some of the contents of the jars to make a Victoria sandwich cake, a lemon meringue sponge, jam tarts and lemon curd tarts but I have loads and loads of the stuff left.

Can anyone suggest what dishes I could use the leftover jam and lemon curd in please? It's taking a heck of a lot of space up in the fridge! :terrified:

Lemon meringue ice cream cake would transfer some to the freezer. There's a recipe on Good Food which is the classic one.

Use the jam to make LInzertorte - uses more than jam tarts as the jammy layer is deeper. I like Delia's recipe for that.

Can add more later - in a hurry now!

Suelle - I just spotted that ice cream recipe while I was doing a google search. That could be a good one seeing as it is so steamingly hot at the moment! :chops:

Turn it out into plastic containers, leaving the jars free forwhatever you want them for.

But surely a call round friends and neighbours would have produced a few jars?

Possibly but we just didn't have the time. OH's grandad said it was a shame because the previous day he had taken about 30 small winkle/cockle jars down to the bottle bank. :roll:
