Chocolate fudge cake recipe?

I would like to add a good chocolate fudge cake to my repertoire (sp?) but with so many around it's difficult to know which one to go for.
Does anyone have a recipe they can recommend please.

Depends on exactly what you mean by 'fudge'. These are two of the best chocolate cake recipes that fit the bill for me, both from Dan Lepard. You'll notice they both contain chocolate and cocoa, and use oil rather than butter.

Both are rich and moist but still quite light in texture - I find the frosting and filling is often what turns a good chocolate cake into a fudge cake

i still stand by the 'bruce bogtrotter being the best ever chocolate cake (use the search button at the top right hand corner).

I always use this Mary Berry recipe for a dark chocolate fudgy frosting - this should be enough to fill and top a two layer cake. You might want to make more if you want to cover the sides too.

Melt 175g dark (70%) chocolate with 30g butter, in a thick pan, stirring until smooth. Remove from heat and beat in 2 tablespoons golden syrup and 3 tablespoons milk.

Mary's recipe uses this while warm to make a shiny glaze, but I usually cool it until it doesn't flow before using it, so there's no wastage. Once cooled it can also be whipped to make it a bit lighter.

Could I take liberties and ask another question please. I only have 2 of each size sandwich tins, would it be possible to make this as a 2 layer cake in the 23cm ones (and if so any idea about cooking time?) or can I cook 2 and then cook the third one (will this delay stop the third cake rising?).

Can I just check 39 g is not a typo? Seems a funny amount

I spent a long time looking for good chocolate and coffee fudge frosting recipes some years ago never found the perfect one, to be honest Betty Crocker frosting always had the better texture, though home made had the better falvaour

This Nigella cake (Chocolate Fudge Cake) looks as if it has the sort of frosting that made my better efforts

I think there would be too much batter for just two 23cm sandwich tins. I'd bake two layers and then bake the third separately - it might not rise quite as much but if you use it as the middle layer it won't be too noticeable. Divide the batter by weight, not eye, so that the third portion of batter isn't accidently smaller too!

The recipe from the roald Dahl cookbook,, I'm pretty sure, would fit into your two sandwich tins. It's also simpler than the magazine recipe.

From time to time I make a chocolate and peanut butter cheesecake. It's more chocolate than cheesecake.

I'm not at home at the moment so I can't link to the recipe. But it's...

1. Line bottom and sides of tin with crushed chocolate cookies, like Oreo.
2. Put layer of chocolate ganache in base.
3. Put peanut cheesecake mix above.
4. Cook
5. Finish with a layer of ganache on top.

Pictures. The middle always sinks a bit...
