Carrot cake question

Hi all.

If I make this carrot cake will it keep for a few days at room temperature or will it need to be refrigerated please?

That's my favourite carrot cake recipe, and I've always kept it at a cool room temperature. If you used a cream cheese frosting it would be better to refrigerate.

In really hot summer conditions it will go mouldy if kept for more than two or three days but that shouldn't be a problem now!

the nigella one i made on tuesday was gone by last night - 2 days tops.

I like the good food carrot cake too, I use an artistic drizzle of glace icing and it keeps a few days

I'll have to make the cake tomorrow and want it to last well into next week (until Wednesday at least), am I asking too much of it?

I think it should last that long, especially if you can find the coolest room to store it in. You could refrigerate it, but I find that many cakes become heavy and stodgy when refrigerated, and this is a nice light cake.

If you're not going to cut it until Wednesday, wrap in clingfilm and leave off the icing until a few hours before serving.
