Cucumber Relish?

I am sure one of the Wildies has a recipe for Cucumber Relish, if so any chance you would share it? :hug: :hug:

´earwig ho:

1 kg cucumber, diced
300 gms onion, finely chopped
1 small red pepper, diced
200 ml vinegar ( mix white with wine vinegar)
500 gms sugar
10 gms salt
1/2 tsp celery seed, 1/2 tsp mustard seeds
pinch turmeric

Dice the cucumber and mix with the salt. Allow to marinate for several hours, preferably overnight.
On the following day, drain the water from the cucumber, add all the other ingredients ( in a large pan) and bring to a boil. Turn the heat down to medium and cook for 25-30 minutes, or until the onionis translucent and the relish has thickened.

this was the one i posted a while back - it's quite similar to the above one.

Sweet cucumber pickle


2lb cucumber
1 large green pepper
2 large onions
2 oz salt

½ pt cider or wine vinegar
8 oz soft brown sugar
½ tsp ground turmeric
¼ tsp ground cloves
½ tsp celery seeds
1 dsp mustard seeds


Wash cucumber but do not peel.
Peel onions.
De-seed pepper.

Thinly slice all prepared vegetables and place in a large bowl.
Add salt and mix well.
Cover and leave to stand for at least 3 hours.
Rinse vegetables well, in a colander, under running, cold water.
Squeeze out as much liquid as possible.

Place in a large pan, add vinegar and bring to the boil.
Simmer until vegetables are soft, about 20 mins (well, I found it a bit longer).

Add sugar and spices to the pan, stir to dissolve and boil for a further 10 mins.

Pour hot pickle into hot, sterilized jars and cap immediately with sterilized lids.

I made some of Scully's Sweet Cucumber Pickle a couple of weeks ago ... but OH keeps eating it!!!

I've just made another batch - thank goodness those cucumber plants Chinch gave me are really really productive ...

I think this is the one...

I have one question.... my cucumbers are the short dumpy sort with short spines and do need to be peeled. Do you think this will detract from your recommendation that the skin needs to be kept on ?

hmm, i'd be inclined just to rub off the spines with a scourer rather than peeling.
the skin on keeps the integrity of the slices - the slices might each split into the three segments otherwise, and it gives a bit more texture.

I agree ... one of the lovely things about this recipe is that the cucumber remains in slices ... we had the last of last year's batch for supper yesterday with some really great burgers on sourdough rolls :chops:

Thanks Girls, that's a good tip about the scourer. By Tuesday I will have 4/5 dumpy ones, so that's another task for next week. :tu:

First nibbling out of the pan are very promising....... Mr. Z. asked what would you serve it with ???? Cheese, salami ???

Cant keep OH out of the jar Zosh, he says it's ready for eating the next day :rolleyes:
It's really good with burgers, cold meat and game, game pie, game/liver terrine .... that sort of thing ... but to be honest I have to make vast amounts of it 'cos OH will eat it with almost everything and once he's got a jar out I can't keep out of it either ........ I've been known to hide a batch or two in a cupboard in the garage just so that it doesn't get eaten with every meal. :lol:
