Leftover from my Christmas cake (which is currently in the oven) :bounce:

I was thinking of maybe lemon curd (to go in tarts) but am not sure what the ratio of the other ingredients would be.

What else could I use it up in?

Lemon curd was my first thought Cheezy. Ratio would be 4 eggs, 12oz caster sugar, 8oz butter and 1 dessertspoon of cornflour.

One alternative use for the lemon juice which comes to mind is a lemon drizzle cake :chops:

Another possibility would be a syllabub or lemon posset perhaps?

Juice of 4 small lemons will get used up in no time in my house :), made into a drink, added to salads or cooked food. A typical Indian salad dressing is lemon/lime juice, salt and pepper. You can add a little olive oil. if you wish.
If you have the juice still, you could make lemonade.

I went to our Dr's surgery today to have the Sister check my BP, as I felt that it could be high. It was just on the cusp of high, so no medication The Sister told me to drink lemon juice, as she said it stabilises BP.
Anyone every heard of that one?

Never heard of that before 4dogs
Googling turned up loads of the sort of internet claims I ignore saying it does, but I could find only 2 scientific papers; the better one found no effect of administering a single large dose of lemon, the second which is rather hard to follow thought there might be a slight correlation between consuming lemons and reducing blood pressure over a 5 month period, perhaps due to raising the level of citric acid in the blood Interesting, but not enough data in that one

If anyone can show it works, I'm buying shares in good old PLJ!

I thought it was rare for a member of the medical profession to recommend a folk remedy, but with two trees full of lemons, I'm going to give it a try.
Although it's not so much reducing my BP, but rather stabilising it. We'll see.

On the subject on lemons..... when we were in Tobago I zested some of what they call lemons (small and green) and Sheldon the guy (Asian Trinidadian) had never come across using the zest before.... he was quite interested, I explained that the flavour was stronger than the juice and I just hope he took it on board as I use the zest of most citrus fruits for extra flavour.

the lemons over here in the Caribbean are always small, smooth, green lemons. The big knobby yellow lemons are known ( at least here in Venezuela) as French lemons.
The flavour, I might add, is totally different.

We have lemons here that have fairly thick, uneven skins. They are known as rough lemons, and are a little sweeter than the smooth skinned lemons Then there are limes, little green and fragrant.

I had the juice of 4 small lemons all nicely frozen in an ice cube tray ... until that is I cleared out my chest freezer last week and they fell down the back .... :( :lol: :oops:
