Question from my mum....

is there any way to stop the scum forming at the top?

The thread header sounds like an insult, as in "You... you redcurrant jelly scum!"...

She said she tried butter, but it didn't totally clear it up.

Also my sis can't have dairy, so she doesn't want to use butter again.

The answer is usually don't keep doing it, Leave it until you have a set then skim while it's still hot. less wasteful of both jelly and effort.
