Will I make crabapple jelly this year?

A preservers paradise. Jams and chutneys everywhere.

Will I make crabapple jelly this year?

Postby FoodMary » August 3rd, 2012, 9:42 am

Between the two villages in this valley is a stand of crab apple trees by the side of the road.

Every year in Sept/Oct Brian and I have walked over to them and collected lbs and lbs which I then made into crab apple jelly which he preferred to marmalade. My ex-employers at Bodnant always looked forward to it too and served it with roast pork.

I don't have Brian to eat it now and Lady A doesn't travel up to Bonant so often (the younger generation are there more often).

Should I make it this year? Will I have the heart to make it. If I do who's going to eat it?

There must be many of you who find yourselves in a similar situation - children flown the nest, etc.

Maybe I'll just make a few lbs and hope someone will eat it, maybe I should offer it to neighbours.

Hi Mary I would make it :tu: will bring back happy memories. I always make jams and chutney's, but very rarely eat them (I have never got into the knack of using sugar substitutes). But they do make super pressies, when Christmas comes around, a nice label and a colour full bonnet, call it Brian's favorite :tu:
Cheers

Bless you Dick - what a good idea. Perhaps I'll get a friend to come with me to collect the apples that will make it easier.

I think if you didn't make it you might wish you had  and as Dick says, it will bring back some happy memories. Collecting with a friend sounds like a good idea. Do you get many folk passing your home? Maybe you could sell little jars of it on a little table outside if so, with an honesty box. Quite a few people round here do that, I always like to stop and see what they have on offer.

Are you able to share your recipe for 'Brian's Favourite'? :)

Re: Will I make crabapple jelly this year?

i certainly am and you are welcome.

Crab-apple jelly

2 kg crab apples
1 lemon
3 pints water
sugar

You can happily double or treble the amounts if you have a big enough pan!

Wash the apples discarding any damaged fruit. Cut the fruit in halves
Cut off the outer peel of the lemon and keep, cut the lemon in half and extract the juice
Place the apples, lemon juice and peel into a preserving pan and add the water.
Bring to the boil and simmer until the fruit is soft and pulpy
Strain the fruit through a jelly bag over a bowl and leave overnight
Discard the pulp and measure the juice into the pan allowing 1lb sugar to each pint of juice. DO NOT ADD THE SUGAR AT THIS STAGE.
Bring the juice to the boil, remove from the heat and add the sugar, stir until dissolved.
Return to the heat and boil rapidly until setting point is reached (105 C on a sugar thermometer)

Pour into clean heated jars, cover and seal.

Enjoy - it is a lovely jelly and useful as a substitute for marmalade and (I know you are vegetarian) also as an accompaniment to pork.

Thank you for the recipe. I have never made a jelly before, this sounds quite yummy. I just asked a colleague if she knows of any crab apple trees around here, and her response was 'What's the difference between a crab apple and a normal apple?' And do you know, I really couldn't answer her, only to say that they grow in the wild and are ugly and gnarly. :?

Anyway, I would like to make this, and said colleague is going to keep an eye out for some trees where she walks her dog.

And if ever..... we don't have any crabs here in the Corrèze. I've already managed to con my niece into making my Damson jam for me.

I think crab apples are usually a great deal less sweet than eating apples...?

I love the idea to label it as Brian's Favourite or Brian's Crab Apple Jelly, but even if you don't, I think it's lovely to still make something that he loved, I imagine it'll be bittersweet but (and I'm guessing here) I imagine he'd like the idea of you continuing to do the things that gave you both pleasure. Asking a friend to help gather the apples sounds a nice thing to do too.

Tezza

Watch out for the trees along country roads. The Blossom is just like apple and the fruits are about the size of a greengage or small plum and are usually either yellow or red. I have seen them on the sides of motoways but a bit difficult to collect from there!!

They fruit prolifically and they drop very easily. In about 20 minutes we can collect enough for about 15lbs of jam.

I'm glad you have decided to! I find that trying to keeping up family and national annual traditions is something very important, the ceremony of eating the annual Hot Cross Bun or picking the first blackberry is a token gesture that we have reached that point in the seasons and that we are doing something that generations have done before us and setting an example for those to come. You will love having a couple of jars in the cupboard and little gifts are always appreciated.

I also think it is a good idea to make it as usual. I have a neighbour whose de-stressing activity is jam making, I give her jars and surplus fruit and receive inexhaustible supplies of jam which is wonderful.

Update on this. Checked yesterday and fruits are just colouring now! Windfalls are green and few. I think it will be a couple of weeks before they are ready. I pass in the car quite regularly so I will know when its time to forage.

Possibly Suffs, as I don't think the East of the country has had such a bad Summer as here. Even my Pippins, which have coloured well, don't want to come off when I twist, they need a bit longer too.

When I drove past my crab apple trees at Penmachno yesterday I notice that they had started to fall(the crab apples,I mean), I am away for a few days now but when I get back I shall take a couple of shopping bags and collect as many as I can. I may ask Sheila from a few houses down the road to help me. So, hopefully, crab apple jelly here I come.

Well, have two carriers half full of crab apples. Actually collected them with my friend from Oz, Annette. Will be weighing and cutting them in halves later this a.m. and starting the process. Hope they are ripe enough as that makes the colour.

Will report back when finished.

This year as I no longer live in the village I didn't think I would be making Crab Apple jelly. However when visiting my dear friend Alison in N.Wales she insisted I go with her and pick crabapples from the trees in her orchard - a goodly amount was picked.

I have been busy starting the jelly off and have the cooked apples in muslin hanging to drip over a large basin. I am so pleased that we here in my retirement complex are holding a MacMillan coffee morning and I will sell my jelly to help the funds.

Ian, if you would like a jar please shout now. Suffs I forgot yours last year, I will keep you one this year, I promise.

This is happy memory jelly :D

The first lot is now ready! I have to make it in two lots as I didn't have room to bring my huge preserving pan here with me. I have ten pots of beautifully clear orangy/marmalady colour and perfect set.

I thought I would just add that my "Brian's Crab Apple Jelly" sold out in the first 15 minutes of the coffee morning :o I found out later that my neighbours Nigel and Carole, who had half a jar that was left over when I potted up, had told everyone that it was the best jelly they'd ever had.

I'm sure that was an exaggeration but it certainly helped it whizz off the sales table  Even the local MP went home with one.

Just as a postscript. My dear BIL came to stay with me for a couple of days and was looking in my preserves cupboard (with my permission) for something to put on his toast and came across a jar of "Brian's Crab Apple Jelly", when I made it I didn't sell or give it all away, kept a couple of jars for the kids (oh, not forgetting Ian and Suffs). "Crikey, are you still making this". he said. "Can I use a jar?".

I told him not only could he use a jar but take the remains back to Brighton with him. So it lives on in the family! I must admit to being left with a warm glow and a tear or two.

Had a conversation with Alison up in N Wales yesterday, where I picked my last lot of crab apples from their lovely oldfashioned orchard which had two different crab apple trees. She tells me that the blossom has been wonderful and early this year, due to the mild Winter.

I look forward to my Autumn trip up to N Wales to pick the crab apples for my jelly so hopefully "Brian's Crab Apple Jelly" will be born again this Autumn.

Ian - yours and Jacquies names will be on at least two jars - not forgetting Suffs

Wonderful news, Mary. Can't wait. I've been reserving the 2013 vintage for Jacquie's birthday celebrations, when we have three couples visiting from three continents!!

The Earth is degenerating today. Bribery and corruption abound. Children no longer obey their parents, every man wants to write a book, and it is evident that the end of the world is fast approaching.

I have just booked my 3 days up in N Wales to visit Alison (and pick crab apples) in September. We always have a whale of a time visiting old cronies as well as picking crabapples - we also manage a restaurant or two with her lovely OH, Gordon who also services my car whilst I am up there - several birds with one stone
