Home made beetroot pickle - how long to keep?

Randomly I was given a lot of fresh beets last week, and after finding an empty jar, combined with random late night googling I made a jar of beetroot and wholegrain mustard sort of pickle. Guess its called pickled beetroot? Is in red wine vinegar...

Anyway, it looks very pretty. I've not opened it yet though - do I leave it to sit a while or give in to curiosity and go try some? Was made on Saturday just gone...

It will be ready to eat now. Should last about 8 weeks.

Delicious Yes eat it now - it goes a bit soft after a while. If you get given another load, somewhere on here I posted a recipe for a Beetroot relish with a little chilli in it. That keeps from now until after Christmas and is delicious too, but it's a bit more of a faff to make

I it's pickled in vinegar, it'll last for several months. However, as Suffolk says, it tends to go soft after 2-3 months and also tends to lose its vibrant purple.
I'm just finishing off some pickled beetroot I made in April - still tasty, but a sort of dirty brown colour!
