Fair enough Terry. Am thinking of dissolving same quantity of instant as Camp and omitting orange juice. Will report back. Says she as she heads off to ki tchen to get mixing :-)

Well, the deed is done. I used 5 tbsp of Nescafe Azzera Americano instant coffee and left out the orange juice. Oh, and I made it with vodka as not sure how juniper in gin would affect the overall flavour. Initial slurp to taste and not bad at all. Will leave it to mellow for a few days. Vodka is on offer more frequently than Tia Maria in the supermarkets. I'm thinking this concoction would be perfect in a pretty bottle for presents.

Hi Zosh how is your folly wine coming on, I have just bottled 3 gallon of Plum & 2 gallon Blackberry both tasting nice, need another 3 months & I think they will be spot on.
My Elderflower wine took first place in our annual wine circle competition last month, the first time I have managed that.

Hi Terry, did you make the "Tia Maria"? I've made several batches since for us, friends and family and don't think I'll ever buy the brand name one again. Thank you :-)

Morning Mrs WWoof, yes I did & very nice to, just trying to save it until Christmas is the hard thing.

Yes Terry, same way but instead of using my usual drinking coffee which contains finely ground beans and so makes for a murky looking end product, I use a cheapie instant freeze dried coffee which provides a "cleaner" end product.

Here is my dried Elder flower Grapple (grape & apple) I can frorce this through in a couple of weeks from start to finish, great for people starting out in home made wine making

Oooh look mummy, daddies making wine out of sick :lol:

So here we are just 8 days after starting it off, SG .995 so all sugar is now alochol & the yeast has died,
Racked off the lees this morning into clean demijon I would expect this to clear & drinkable in about a weeks time, around 16 days start to finish.
However I will bottle & let it rest for a couple of months to mature a little but even this morning taste test was good.

The White grape juice you can get from Waitrose & the Apple from anywhere, Dried Elderflower can be bought on line but you can always leave out the Elderflower & just use Grape & Apple juice

When I lived in Ireland, I made a lot of 'country wines'.
Try this blackberry liqueur:
Wash blackberries to remove and dust and/or insects. Put into a deep bucket, and add 1/4 the weight of blackberries in sugar. Stir, and cover closely with muslin. Leave for several days, stirring from time to time. The natural yeasts in the fruit will cause fermentation. Once the fermentation slows down, strain off the fruit, and put the liquid into a demijohn with airlock.
As the lees settle, rack. You may need to do this several times. Before bottling, filter through a coffee filter, which will remove any tiny berry hairs.
Keep as long as you can before drinking, the longer, the better!
Don't stop doing things because you are growing old; you only grow old if you stop doing things.

I made 6 gallon similar to that last year, I have about 1 gallon left :lol:
I do make liqueurs as well but add pure Polish100% spirit or Gin to make it into a liqueur, all of that has gone. :lol:

I used to play around with wine a decade or so ago, but when we moved I ditched all my DJ's and associated stuff. Maybe I will just drink yours !!!! :o

My father was the wine maker in our family (he also made preserves of all sorts- I seem to have inherited the preserve gene from him). He made the most wonderful elderberry wine- it was really, really good (and utterly lethal ;) ).

I have put some honey, vodka and chopped dill in a bottle and it is on the mantlepiece doing its stuff. We shall see how it turns out over time. :cocktail:
