And the poor lad who'd worked in Paris produced a a Buerre Noisette ... of course ... what else?

Think Marcus did look slightly shame-faced 'cos he should have realised that there could be some ambiguity for a classically trained chef.

What a varied standard last night. The Maltese chef was one of the better ones but oh my goodness didn't he fancy himself?

Fancy not cleaning the squid before cooking it :sprout:

That was the lad from Jersey wasn't it Suffs. It looked as if he works at either Longueville Manor of Sean Rankins place - bot great restaurants - if you are a jersey financier

Did I mis-hear or did he describe himself last night as being 'open minded'?

I think he said "we" are open-minded, Suffs ... I wasn't well and was crashed out on the sofa, and so was only listening with half an ear and not really watching, but I recall him being incredibly rude and dismissive about one of the offerings - can't remember which one - but then he couldn't find anything bad to say about the dessert so seemed lost for words ...

Yes ... Grace Dent pulled him up on that one didn't she (I'm not her biggest fan but I warmed to her when she did that).

Hope you're feeling a bit better today

I'm guilty of falling asleep through these this year and am normally hanging off the edge of my seat! They are usually repeated over the weekend I think so I'll catch them somehow.

So the guy with the cheek tattoos is out? Thank God for that. I found his appearance very disturbing. Distracted me away from any talent that he may have had.

The other affectation this year seems to be great plugs of wood? in one or both ears. Makes them look more like witch doctors than chefs.

I too like the teacher he had that lovely easy Caribbean charm

  just spotted the terrible typo in the thread title, hopefully corrected now ;)
I'm enjoying the series so far, the usual mixed bag of decent cooks, one's with potential and those who aren't as good as they think they are.
I'm not keen on tattoos but would rather them thank the ear plugs!
I know a guy who is now a senior catering lecturer, I think, like him, most them worked in professional kitchens before going into the teaching background and they are certainly expected to know their stuff across all the sections. He previously was a senior chef a local high end hotel but wanted away from the hours and weekend working rather than away from cooking. Lecturing was ideal in this respect.

I see we had another witch doctor in our midst tonight. There was more hole than ear!

I'm afraid I wasn't really blown away by any of the chefs tonight and am finding the whole series pretty lacklustre if honest. I can't put my finger on why. Have they dropped some of the background tension music perhaps? No doubt I'll carry on watching it!

The skills tests are so bizarre this year!

How would other Wildies have presented broccoli three ways in the time allocated? I probably would have done a puree and a tempura and then run away!

I don't think that GW, MW and MG make a comfortable trio. Anyone else feel that?

I would struggle to think of ways to prepare broccoli: steamed and er....steamed? I also found the lat chicken one strange; a fried egg and boiled egg side by side! :?

I'm enjoying the skills tests, deceptively simple looking but difficult to pull off. I did like the look of the polinaise sauce and very doable I thought so intend to try making it. :)

II think the correct 4 are through to finals week. I am glad thatall tree judges remarked that two of last night's chefs were just over-thinking things trying to show off in effect.

Incidentally I noticed that one of the top chefs for next week is my current heroine Ann Sophie Pic.

This is where we went for my special birthday treat in October.. It will be lovely to see behind the scenes.

I think his was the only one which got any criticism from the chefs...still good though. I agreed with, I think it was Jocky Petrie, who said there were too many bright colours on the plate. It was very nice when he said he was going to pinch the recipe for the apple tuile, it must have given Oli a terrific boost. Dean is just not used to working in a big kitchen, he is must better in the studio.
I’m really looking forward to tonight’s programme, will be so interesting to see ‘Rat’s restaurant’.

Tonight was really enjoyable. How lovely to see so many delicate and artistic dishes of food. A far cry from a Christmas roast. Light plates of food. Those pieces of fish that looked like racks of lamb! Out of this world at Pic's. Lucky you Rats! :tu: I loved the intriguing white cube pudding. All of it really. I am putting my money on Laurence to win . He has shone from day one. Nothing seems to phase him. I love his focus, energy, commitment. They all have that, clearly, but I think he has the edge.

Excellent entertainment. Will be sorry to see it end...
Imagine peace
