Heston's marvellous menu: back to the noughties

Postby PatsyMFagan » December 19th, 2019, 9:30 pm

Just watching this and remembering one of the early meet-ups from the BBC board at his pub the Hinds Head in Bray ... I recall Ian and Jackie were there, also Sue Turner-Smith and her late husband. Earthmaiden too ? The pub doesn't seem to have changed much, but the Fat Duck is almost unrecognisable. :o

I was there! I think Mr & Mrs Aero and possibly KC2? I sat next to a guy who posted quite a lot on the board but don't remember his name. Was that talking point pud called quaking pudding?

Yes, Quaking Pudding
I had the pears in red wine, as I had made them at home. Very much the same :D

I remember reading about that meeting, wasn't there a steamed pudding with a meaty filling that had been pressure-cooked for ages?

It made me think we ought to try the place, but still haven't got there. :(

Yes! I had forgotten that meat (s&k?) pudding. It was lovely. It was, as Sue says, where we tried thrice cooked chips which were quite innovative then. Dare I say now that was a bit disappointed with the chips, of course I love a well done, slightly crunchy chip but they seemed a bit too crisp/overdone to me .

I wonder how long ago it was, it was during the period 2003-2010 when I was working in that area.

I think I had the S&K pudding. I also remember a dish made with wafer thin slices of apple :chops: .... and we ate in the room upstairs that was also featured last night as this was where they all met up. :bounce: :hi5:

I must find it!

I have just looked at the menu for the Hinds Head. It was Oxtail and kidney pudding. They still do it and the Quaking pud. I was going to suggest another visit but we might need a mortgage .

I caught up with this programme last night. I had not realised that it was Heston who introduced water baths. He has a lot to responsible for

Just caught up with the programme. Really brought home how much has changed since 2001 and how innovative it all was. That one of the modern chefs was 3 years old at the time was an eyeopener too :o.
