Made this yesterday:


Put Babybel in freezer to make it more solid (to allow me to grate it easier)

Slice and rinse leeks. Microwave for 5 minutes in a covered pot. Mix in 3 laughing cow extra lights. Leave to cool.

Slice the courgette into rounds and fry in fry light until browned and dry.

Chop the asparagus tips off. Slice stalks and brown the same as the courgette.


Mix 300ml of egg white into the leeks and season well.

Stir in the browned vegetables carefully (you don't want to make your Fritatta grey brown).

Pour mixture into a pan (I lined mine with non stick baking paper) arrange asparagus tips on top.

Grate on the chilled babybel.


Bake at 170c/325f for 25-30 minutes.


Rested upside down on a rack over a plate to stop it getting soggy:


I then used my blowtorch on the top as the cheese hadn't browned much.


97.25cal per quarter. perfect for a fast day lunch.
