Summer chicken recipes

I mentioned one of my favourite recipes on the Sundat Roast thread.

It is very very simple.

Poach a whole chicken with plenty of the usual flavouring suspects. leave to cool in the resulting stock.
When cold joint and skin,
Cook green asparagus and allow to cool.
make a vinaigrette using the yolks of two hard boiled eggs, creamed with a tsp Dijon mustard and a couple of tbasp white wine vinegar or lemon juice. Add half a chopped shallot and Ara tbso chopped parsley and, if you like it tarragon. Season and add enough olive oil to get the consistency you like, thick or runny. add the finely chopped egg white.

Arrange the chicken pieces and asparagus on a serving dish and pour over the vinaigrette.

Don't forget you still have a pan of delicious stock - extra good if you use it to make avegelomo

My go to summer chicken dishes are Delia's chicken Basque, and chicken with 40 cloves of garlic.

I would say my go to summer chicken dishes are a simplified Coronation chicken and the lemon chicken from Katie Stewart's Times Cookbook

I love the sound of your recipe, Rats :chops:

I love to cook a whole chicken in a slow cooker with just lemon juice (and the lemon tucked into the cavity with some thyme or tarragon). The result when cooled is so succulent. It is virtually a poached chicken so the vinaigrette would go well - as does mayonnaise with a hint of tarragon handed round separately.

Sounds delicious Rats and similar to something I do. It will definitely figure on a menu in June when I have quite a large party of family coming over for a reunion of sorts. There are also some delicious sounding other recipes here.

That's very similar to the herby chicken I make. I don't use the eggs in the vinaigrette though. My family also like version of bang bang chicken. I poach chicken with fresh ginger then shred it, lightly pickle matchsticks of cucumber, carrot and spring onion in rice vinegar and sugar, then mix it all with noodles and dress with satay dressing.
Poached chicken breasts are so versatile and it doesn't dry them out as other cooking methods can. Oh, can't forget coronation chicken. Guess what's just gone on this week's shopping list?

Rats, that sounds utterly delicious and just perfect for a warm spring or early summer day. Would be lovely with some Jersey Royals on the side wouldn't it? :chops: :chops:

We've got friends returning to their house here for the summer next week and popping in for Sunday lunch to catch up on all the news.

I am planning on another favourite summer chicken dish. It involves a chicken breast per person. Flatten each one out, spread with Boursin cheese then put a trimmed slice of Parma -type ham on top and then a very lightly steamed piece of green asparagus. Roll up tightly and wrap in cling film securing the ends. Prick the film with a sharp point then poach in chicken stock for about 15 minutes. The prep can be done several hours in advance,

When cooked unwrap and slice quite thickly. I'm going to serve it on a spring risotto but sometimes I just put the slices of more asparagus with a chive cream.

Can I ask Rats, why stock, if you wrap it in clingy ? Would not just water do the same ???

We made something like at when I went to posh cookery classes - delicious! I imagined that the cling film was to hold the roll tightly together as it cooks and not to swamp the meat as well. It slices very elegantly.

Absolutely correct. I used to wrap the rolls in muslin but a chef friend told me not to bother, cling film works just as well, as long as you prick it.

Sounds really cheffy I know but it is simplicity in itself and the added bonus is being able to prep it ahead of time and it looks very pretty.

I do something similar with Chicken Supremes (Borsin under the skin and wrap in streaky bacon) but I roast them rather than poach them.

I do something very similar Seatallan but with Parma ham. I sometimes add a leaf of sage too.

I haven't tried the poaching method before but will do so - isn't the asparagus rather overcooked though?

so still pretty close to raw, plus it won't get very hot for long in the centre of the thing is my best guess.

1) Arroz con pollo ( Chicken with rice)
2) Chicken with fresh tomato sauce

I think chicken with 40 cloves of garlic is also rather a nice summer dish.

I was thinking of you this week KK because I listen to World Service quite a lot and the news from your neck of the woods sounded pretty grim. Hope you are all OK.

Thanks, Rats. No easy over here. Chicken is sometimes available... and sometimes not!
I`ve just thought of a lovely summer chicken recipe which is very popular over here. It`s called " Empanada Gallega" - basically a savoury chicken pie with very thin pastry, which can be eaten warm or cold. The original recipe ( as the title suggests) is from Galicia, in Spain.

I've ordered a small chicken from Asda (their 3 for £10 deal) so that will be chicken with 40 cloves of garlic in the slowy.
This next few weeks is about feeding the Daughter well and keeping her happy whilst she's doing her exams, I have ordered extra beer for me :D
