Looks good. I make a tomato and feta filo tart using roasted tomatoes, after a recipe by Michael Michaud. Same sort of idea.

The problem with a lot of summer tomato tarts is that there is tomato and pastry but nothing which marries the two very well. I have never made a tomato tarte tatin but like to think that the caramelized juices would serve this purpose.

What variety is that, Zosh? Black Russian?

I need to use my delicious roasted tomato passata today. Not sure what to do with it...

I bought a tomato press (see what have you cooked vegetarian today thread) to help with tomato crop. It is currently my new favourite gadget.

Have you tried bottling it, Herbi? For use in cold , blustery February 2019, for example?
My neighbour buys a whole crate of tomatoes (when they´re cheap) and makes gallons of passata. She bottles it when hot, then floats an inch of olive oil on top and stores it in the cupboard.

I make lots of passatta every year. I freeze it 400ml amounts and that works well for me. This year I'm thinking of trying to make tomato concentrate/puree if I get a decent crop. I really should think about getting one of those tomato presses :)

Yes Herb, a Black russian and jolly tasty they are too, very sweet, almost not like a tomato at all.

I was reading about pasta bottling, seems to be very much a family Italian thing. We are eating a lot of them at the moment and giving some to my cat sitters and waterers as a thank you when we will be away. Can one be poisoned by too many tomatoes :chops: :chops: Skins can be a bit on the tough side but that's where the teeth come in....

I picked one and it was a bit mealy, alas, and not 'smokey' as promised. But some of my tomatoes did suffer while I was in Germany last month, so...

I'd like to bottle some passata, but I am always nervous about such things. There was the mouldy smoked roasted peppers in oil incident... But that was when I was young and inexperienced. Still, I'd hate to got to a lot of effort and use up a lot of tomatoes for htem to be wasted. I shall probably go down the freezing route, although I shall have to chuck stuff out to make room.
I suppose one could dry some. I have a dessiccator thingy somewhere.

Tomatoes are supposed to be bad for arthritis...

Oh heck, my joints do ache sometimes, but I understand the layer underneath the tomato skin is wonderful for your health....

Do not be afraid to make passata and bottle it for the winter months.It´s really very easy; if you´re a little worried, just make a small lot ( say, 5 kgs) and see how it turns out.

I made a large quantity of tomato sauce then froze it in separate bags.. It was just onions, tomatoes and salt, no water or other additives.

Apparently all the Nightshade family (tomatoes, potatoes, peppers and aubergine) cause inflammation for those who have OA :rolleyes:
