When a friend and I had a catering business I used to make one off decorated special occasion cakes with fondant icing. It keeps well so I wouldnt worry about icing it a couple of days before you go away. Keep it in an airtight plastic cake box type thingy and it’ll be fine.
My best tip for using fondant icing is to dust your working surface/rolling pin etc with a little cornflour rather than
Icing sugar and you’ll avoid stickiness.
